The cafe opens at 8 AM and closes at midnight. Most cafes close at six. We stayed open because the people we built this room for — writers, students, friends who needed somewhere to land after dinner — needed a third place that did not turn into a bar at sundown. Come after 9 PM. The lights soften, the espresso machine slows down, and the conversation drops a register.
