The story

A small bar, run by a family.

Brio opened in Sanayeh in 2022. Karim leads the espresso program; his father runs hospitality; his brother runs the bar overnight. We do not chase trends. We pour clean coffee for people we know by name, until late.

The room is intentionally undecorated: warm wood, low brass light, soft conversation. The cup is the only thing asked to perform.

The ritual

How a cup leaves the bar.

  1. 01

    Weigh

    18 g

Single origin in, ground to a coarse table salt feel. We dial in twice each morning.

  2. 02

    Pull

    93 °C

27 second pull, 38 grams in the cup. The crema settles before milk ever meets it.

  3. 03

    Steam

    64 °C

Whole milk, micro foam, no shrieking pitchers. The bar runs at conversation volume.

  4. 04

    Pour

    0.8 s

The rosetta sets and the cup lands on a saucer with the brushed b facing you.

The room

A quiet hour, just before midnight.

The lights dim a half stop after nine. The espresso machine slows to one barista. Conversation drops a register. This is the hour we built the cafe for.

The beans we are pouring this week.

Sourced from a Lebanese roaster, with single origins flown in when a lot earns it. The lineup rotates; the menu does not.

I write better here than at home. The lights, the music, the second cup. Three years now.
